New Experiences Can Be Frustrating!

If you have been following this website for any time at all you know that I have started taking metalsmithing classes.  I have always been fascinated by jewelry and wondered how it is made so I decided to find out.  I recently completed my second

Delicious and Easy Grilled Mediterranean Kabobs

I love going to Greek restaurants for the delicious gyros.  All those fresh flavors combine into something truly delicious.  The only reason I go to a restaurant for this is because I couldn’t figure out how to make it at home without purchasing a “wheel”

Add Middle Eastern Flavors to Any Dish with Mint Chutney

My family loves to explore foods from around the world and this is a favorite.  This recipe is full of fresh flavors and a little bit of heat from the peppers.  Make it a few hours ahead of time so the flavors have a chance to meld.  Enjoy it with chips (in place of salsa), fresh pita or naan bread, on salads, with Mediterranean Kabobs, roasted lamb, etc.  This is one you will want to keep in the fridge ready to go at all times.

Mint Chutney 1

Mint Chutney

1 1/2 – 2 c. fresh mint leaves

1 bunch fresh cilantro

5 – 6 fresh green onions

2 cloves garlic

1 – 2 fresh jalapenos, chopped into large chunks

2 T fresh lemon juice

Place the mint leaves and cilantro in a food processor and process until uniform in size (no large leaves or stems).  Add the green onions and garlic and process.  Add the jalapenos and lemon juice and process one more time until smooth (you may need to add more lemon juice in order to get a smooth sauce).  Place in a glass bowl, cover, and refrigerate until ready to use.

This mint chutney is great as a substitute to salsa with freshly cooked tortilla chips, pita chips, etc. also great on a salad to add fresh flavors and a bit of tang.
