Parmesan Frico’s are a Great Way to Add Decadence to any Simple Soup or Salad

I love frico’s.  There are so easy to make and they add a whole new level of flavor and decadence to any soup or salad.

Parmesan Frico

5 T finely grated parmesan cheese per frico

1 T fresh rosemary, finely chopped (optional)

1 t fresh cracked pepper (optional)

Place 5 T grated parmesan cheese in a small pile on a parchment or silpat lined baking sheet (use 5 T cheese per frico).  Lightly pat out the cheese into a three-inch circle.  Sprinkle fresh herbs or pepper on top of the cheese.  I prefer to pan my grated cheese into a pan free form then break up the frico after they have cooled.

Bake in a 350 degree F preheated oven for about 10 – 12 minutes.  You want the cheese to lightly toast but not burn.  Remove from the oven and allow to cool (or remove from the over and carefully drape the frico over a small bowl to form a cup).

Serve the frico along side fresh green salads or with vegetable soup, chicken soup, or beef stew.  These can be stored in an air tight container for several days.   Delicious!!

NOTE:  You can make your frico’s any size you want.  I have made large ones and draped them over a bowl to cool then served a fresh herb salad in the “cheese bowl”.
