Great way to add variety to Cauliflower
This is a great way to add variety to cauliflower. I just make it like potato cakes. It is more conducive to a low carb diet and tastes great.
Cauliflower Cakes
1 head of cauliflower, cooked and processed in a food processor
3 cloves fresh garlic, finely minced
3 fresh green onions, finely minced
2 whole eggs
1/3 c AP flour
salt and pepper to taste
Mix all the above in a large bowl. Heat a skillet with enough olive oil to cover the bottom. When the oil just begins to smoke, carefully drop spoonfuls of the cauliflower mixture into the hot oil. Flatten slightly with the back of the spoon. Cook until brown then flip over and cook on the other side (about 3-5 minutes per side). Remove to a platter and serve immediately.
