Ultimate Grilled Cheese

This recipe for grilled cheese is a grown up, adult version of a classic.  Most of us want a little more flavor as adults than we do as children and this version will give you all the taste you crave in this classic comfort food.

Comfort Grilled Cheese

Ultimate Grilled Cheese

2 slices bread (choose a whole grain version you like)

2 cloves garlic, peeled and crushed

2 T butter, divided

cheese (use your favorite or explore new varieties.  I like Gruyère and parmesan – it is nutty and has a slight tang)

Heat a heavy bottomed skillet with one tablespoon butter and the crushed cloves of garlic.  After the butter is hot and bubbly, remove the garlic cloves (save for toasting the other side of the sandwich).  Place the prepared sandwich in the hot butter and turn the heat down to medium low.  Allow to toast slowly on the first side until the bread is golden brown.  Remove the sandwich and place the other tablespoon of butter into the skillet with the reserved garlic.  Once again, melt the butter to hot and bubbly; remove the garlic and place the sandwich (un-toasted side down) in the skillet.  Allow to toast until golden and brown.  Remove and serve immediately.

This garlicky grilled cheese is great with roasted tomato soup.  Another grown up version of classic comfort food.  I will be posted that recipe soon.
