German Chocolate Pie

Wow!  That was close.  I almost missed the photo-op for this recipe.  My family devoured this pie.  I guess they liked it!  Full of chocolate-y goodness, I’m sure you will love it too.

German Chocolate Pie

1 Flakey Pie Crust Recipe

6 oz. semi sweet chocolate chips

1/4 c butter, unsalted

3 1/2 T cornstarch

12 oz. evaporated milk

3 large eggs

1 1/2 c sugar

1 T unsweetened cocoa powder

1 t vanilla paste

1/3 c flaked coconut

1/3 c chopped pecans

pinch of salt

Preheat the oven to 375 degree F.  Prepare pastry and place in a pie dish. (I used a deep dish)

In a med. sauce pan, heat the butter and chocolate chips stirring constantly until everything is melted and smooth.  Remove from heat and slowly pour in the evaporated milk, stirring until combined.

In a medium mixing bowl, combine the sugar, cornstarch, salt, and cocoa powder.  Mix well.  Add the eggs and stir until everything is combined.  Using a wire whisk, add the chocolate mixture (three additions of 1/3 each) stirring until well incorporated between each addition.  Add the vanilla and stir well.  Pour into the pie shell and top with the coconut and pecans.  Bake for 50 -60 minutes or until the center is set.  Allow to cool completely (the pie will firm up as it cools).  Serve with sweetened whipped cream and chocolate shavings or chopped pecans.
