These nuts are surprisingly easy to make and delicious to eat. In fact, they are so easy you will want to whip up a batch for movie night, the big game, or when you want something crunchy and sweet.
Sugar and Spice Toasted Nuts
2 c. nuts, unsalted (almonds, cashews, pecans, walnuts, or mixed)
1/2 c sugar
1/4 c water
2 T ground cinnamon
1/4 t cayenne pepper
1 t pumpkin pie spice
kosher salt to taste
Bring the water to a boil in a medium sauce pan. Add the sugar, cinnamon, cayenne pepper, and pumpkin pie spice and continue to cook. When the sugar has dissolved, add the nuts and stir to coat. Continue cooking for 5 minutes or until the syrup is thick. Carefully spoon onto a parchment paper or silpat lined baking sheet, sprinkle with kosher salt, and bake for 20 – 25 minutes stirring the nuts every 10 minutes. You will know when the nuts are done when you take one out of the oven, allow it to cool and the candy coating isn’t sticky.
NOTE: these would make an excellent “neighbor” gift for Christmas, hostess gift, or something to take to a party to share.
