Colder temperatures mean comfort food for dinner. But I want comfort food that is tasty, juicy, and delicious. This pork recipe is just that without a lot of fussy ingredients or prep time.
Orange Pork Tenderloin
3-4 lb pork tenderloin, trimmed of excess fat
8 oz orange juice
4 cloves garlic, finely minced
1 T Dijon mustard
2 t Thai garlic and chili paste
salt and pepper to taste
Cut the tenderloin so it “unrolls” and brown all sides in a large skillet.
Place the orange juice, Dijon mustard, garlic, chili paste, salt, and pepper in a slow cooker and whisk together until well blended. Add the meat and turn on. Deglaze the skillet with more orange juice. (I cooked my on high for 4 1/2 hours and then turn to low until we are ready to eat).
When you are ready, remove the meat from the slow cooker and shred. Reserve the cooking liquid for any leftover meat.
Serve with tortilla’s, crusty bread rolls, fresh salad, mashed potatoes, etc. Great for a crowd or game day!
