Simple and Delicious, Sausage and Peppers for Dinner

Sometimes you just need something that you can throw together for dinner but it has to taste great too.  Sausage and Peppers is a classic Italian dish that is simple but full of great flavors.

Sausage and Peppers

Sausage and Peppers – serves 4

1 1/2 lbs.  Andouille or kielbasa sausage, chunked (try to find low-salt, low-fat to help make this dish even more healthy)

4  bell peppers, assorted colors

4 cloves garlic, finely minced

2 medium onions, sliced into rings

1 t thyme

6 green onions, chopped, optional

4 oz. mushrooms, optional

Salt and Pepper to taste

In a large skillet, heat 1 T olive oil and brown the sausage, remove to a platter.

Add the onions and sauté until starting to look opaque then add the garlic, thyme, and peppers.  Sauté until just starting to cook, about 5 minutes.  Add the mushrooms and cook for 5 more minutes then add the sausage back to the skillet and mix well.  Top with the chopped green onions.  Serve alone, with fresh cooked pasta, or on a bed of mixed greens.
