Vegetable Frittata
This Vegetable Frittata is a great addition to your Easter Brunch. It is so easy to make, takes only 20 minutes to bake and serves lots of people.
Vegetable Frittata
2 lb. mixed stir fry veggies (if you are pressed for time, use the pre-cut veggies in the produce dept.)
8 oz. sausage (cooked and crumbled) – optional
8 large eggs, beaten
3 T chopped flat leaf parsley
1/3 c grated parmesan cheese or cheddar cheese – optional
olive oil, salt, pepper
Sauté the veggie in a large sauté pan with about 1 T olive oil. Add the sausage (if you are using) and mix to evenly combine.
Pour the beaten eggs evenly over the top of the veggies. Place in a preheated 425 degree oven for about 20 minutes or until the eggs are completely set. Turn off the oven, sprinkle the cheese over the top of the frittata and close the oven door.
Allow to coast in the oven for about 5 minutes. Remove and serve immediately.
This frittata goes great with fresh croissants, caramel rolls, etc. We love it for dinner too.
