Peppermint Creams
If you like chocolate peppermint patties, then you are going to love these Peppermint Creams. They great part is you can make them as patties or as a cookie. Both are delicious. Feel free to explore other flavors as well by substituting the peppermint flavor with what ever your heart desires. I think orange, lemon, butter, chai tea, etc. sound delicious. But anyway you go, you’re going to LOVE THESE!
Peppermint Creams
1 – 14 oz. can of sweetened condensed milk
1 T flavoring (whatever flavor you love)
5-6 c. powdered sugar
1 T very soft unsalted butter
Using a mixer, combine the sweetened condensed milk and flavoring. Mix until well incorporated. Add the soft butter and 1 cup of powdered sugar. Mix until all the sugar is incorporated. Continue adding one cup of powdered sugar and mixing until the cream holds its shape (think of peanut butter for the consistency).
Using a small cookie scoop, portion out the cream onto a baking sheet, pressing to form a flat disk or place on top of a chocolate cookie wafer (you can also use vanilla wafers). If you are not making into cookies, place on a baking sheet and allow to air dry for a few hours on each side or stick in the freezer for about 30-45 minutes then coat in melted chocolate (I use candy melt chocolate for this because you don’t have to temper it). Allow the candy coating to set up then store in an air tight container.
