Grilled Sambal Chicken
This chicken recipe is perfect for those times when hot and spicy is all you want. Perfect on the grill with some veggies. Try with grilled sweet potatoes.
Grilled Sambal Chicken
4 T Cholula (don’t use Sriracha, it over powers all the other flavors)
1/2 c loosely packed brown sugar
1/3 c garlic and chili paste
2 T fish sauce
2 t finely grated ginger
1/2 c. rice wine vinegar
Whisk the above ingredients together in a bowl until well combined and no lumps of brown sugar remain. Reserve 4-5 T for later use.
Trim and score four skinless, boneless chicken breasts and place in the remaining marinade, coating both sides. Refrigerate for two hours or until ready to cook.
Place on a hot grill and leave undisturbed for 4 minutes (for grill marks). Turn over and brush with the reserved 4-5 T of marinade. Cook until done (about 10 minutes total).
