Heirloom Tomato and Mozzarella Salad
The heirloom tomatoes are ripening in force. Loving these little globes of goodness, I wanted a way to prepare them that highlighted the delicious fresh taste. This salad is the perfect way to do just that.
Heirloom Tomato and Mozzarella Salad
1 pint of heirloom cherry tomatoes, washed and cut in half
8 oz. small mozzarella balls or 8 oz. fresh mozzarella cut into cubes
4 oz. assorted olives, pitted and cut in half
3-4 large basil leaves, chiffonade
1-2 T extra virgin olive oil
1 T pear chardonnay vinegar (or your favorite light flavored vinegar)
2-3 drops orange oil
fresh cracked pepper
favorite salt (I like to use black salt – this is available at the olive bar section of King Soopers/Kroger stores)
Place the tomatoes, mozzarella, and olives in a medium size bowl. Drizzle the olive oil and vinegar over the top and add the drops of orange oil (be cautious with the orange oil, it can overpower easily). Add the basil leaves and olive then season with salt and pepper to taste. Stir and allow to sit at room temp for 15-20 minutes to allow the flavors the mingle. Serve with crusty toasted bread.
