Just because it’s “diet food” doesn’t mean it can’t taste good too. These Cucumber Bites are great on many different diets, including ketogenic and low carb. Full of healthy ingredients, they are great even if you aren’t on a diet.
Cucumber Bites
1 cucumber, cut into round slices
1 avocado
1 small clove garlic, very finely minced
1 T shallot, finely minced
a small pinch of salt
a small pinch of cayenne
2 t lime juice
paprika, optional garnish
cherry tomatoes, cut in half, optional garnish
Combine all the ingredients except the cucumber in a small bowl and mash together (or place in a mini prep food processor and processor until the desired consistency). Adjust the seasoning and then top each cucumber round with a spoonful of the avocado the sprinkle with a bit of paprika and a half of a cherry tomato if desired. Delicious and healthy!
