Immunity Booster Soup for Colds and Flu
It’s the end of the school year and kids everywhere are busy burning the candle at both ends trying to get everything finished before the end of school and graduation. I know my daughter is working herself silly between college, studying for finals, finishing Senior projects, working a job, and trying to find time for a few minutes with friends. She actually tries to get a few minutes of sleep occasionally too. So when she came down with a killer cold this past weekend, I wasn’t surprised. However, this time my advice was considerably different from the past. This time I made a pot of “Immunity Booster Soup”. She was feeling better within a few hours and ready to get back to “it” in no time.
Immunity Booster Soup
4 c homemade chicken stock (if you don’t have homemade, be sure to use organic – keep this recipe as pure as possible)
1 medium onion, thinly sliced
8 cloves garlic, finely minced
1 inch fresh ginger, peeled and finely minced
1 bay leaf
1 small bundle of fresh thyme
2 T fresh flat leaf (Italian) parsley
In a medium soup pan, sauté the onion until it starts to caramelize. Add the garlic and ginger and cook just until the aromas start to release. Immediately add the chicken stock and the herbs. Simmer for 15-20 minutes. Eat hot.
