Healthy and Delicious Basil Beef with Broccoli
Here is another recipe that is super fast but full of flavor and very versatile. If you don’t care for broccoli, don’t use it. Use whatever veggies your family likes. We eat this just as it is but you can put it over rice or toss with pasta.
Basil Beef and Broccoli
1 lb. beef, trimmed of excess fat and sliced thin
2 large crowns broccoli, washed, trimmed, and cut into bit sized pieces
1 1/2 c fresh basil, torn into pieces
2 bunches green onions, washed, trimmed and cut into 3 inch pieces
2 cloves garlic, finely minced
1/2 c beef stock
1 inch piece of fresh ginger, finely minced
1 t arrowroot
2 T sesame oil
Heat 1 T sesame oil in a large, heavy bottomed skillet. Add half of the beef and sauté until brown. Remove and repeat with the rest of the sesame oil and meat. Remove from the skillet when browned.
Add the broccoli to the hot skillet along with the ginger and garlic. Sauté until the broccoli is bright green and just starting to soften. Add the beef back to the skillet. Whisk the arrowroot into the beef stock and add to the hot skillet stirring until it starts to thicken. Remove from heat and add the fresh basil and green onions. Stir until the basil starts to wilt. Serve immediately.
