Beef Rouladen – Great Comfort Food!
This recipe for beef Rouladen has been a longtime family favorite. Some of the ingredients are a little strange but they all come together to create an amazingly delicious flavor profile. Add potato dumplings (I use a mix) and French bread and you have a complete comfort food meal!
Beef Rouladen
1 3-4 lb. eye of round roast, cut 1/4 inch slices length wise and pound to thin out a bit.
pickle spears (enough for each slice of roast)
1/2 c Dijon mustard (This is approximate. Again, depends on how many slices of roast you have)
3 bay leaves
3 cloves of garlic, finely minced
1 med. onion, quartered
4 sprigs of fresh thyme or 1 t dried
16 oz beef stock
10 carrots, peeled and cut in half
salt and fresh cracked pepper to taste
Lay each slice of pounded roast on a flat work surface. Spread about 1 1/2 T Dijon mustard over the slice and place a pickle spear at the end. Sprinkle with fresh cracked pepper and a little salt if desired.
Roll the meat up and secure with a skewer.
When all the meat has been rolled, brown all sides of each roll in a heavy skillet with olive oil. Deglaze the pan with 1 – 2 c beef stock.
Place the meat rolls in a slow cooker. Add the beef stock from the deglazed pan, bay leaves, garlic, thyme. Top with the carrots and onions.
Cook for 4 hours or until very tender. Remove the Rouladen to a platter and thicken the remaining juices. Serve with potato dumplings, a fresh salad, French bread, etc.
