Cheese Stuffed Shrimp
This recipe came about because my husband grew tired of grilling stuffed shrimp only to have the filling melt out. So, another recipe for stuffed shrimp.
Cheese Stuffed Shrimp
5 oz. queso fresco
1-2 Fresno peppers, seed one and finely mince both
2 cloves garlic, finely minced
1 T chili paste
1 T Ginger Teriyaki sauce
2 T Italian parsley, finely minced
Mix everything together in a small bowl.
Allow to sit at room temp. for 30 min. then stuff the shrimp. Wrap in bacon and grill for 8-10 minutes or until the bacon is crispy. Serve hot with a fresh salad.
NOTE: queso fresco doesn’t melt so it won’t fall out of the shrimp. Just make sure to over lap the bacon to cover the filling completely.
