Grilled Stuffed Zucchini
I love summer, all the fresh veggies that are filling up the farmers markets and our fridges. I am always looking for ways to utilize the fresh produce and this has become a family favorite. Even the kids love it!
Grilled Stuffed Zucchini
1 lb. veal or lean ground beef
1/2 medium onion, finely chopped
4 cloves garlic, finely minced
5 fresh green onions, chopped
3 ribs celery, chopped
8 – 10 tomatoes, chopped or 1 large can of fire roasted tomatoes
salt and pepper to taste
4 – 6 fresh zucchini, cut in half and the inside scraped out (use a melon baller), chop the part you scrape out
1 c red wine
1/2 c finely grated parmesan cheese
8 – 12 thin slices of Gruyère cheese
In a heavy bottom sauté pan, brown the onions in some olive oil. Add the garlic and the celery and allow to cook for about 5 minutes. Add the veal and brown. After the meat has browned, add the tomatoes, zucchini meat, and wine. Cook until almost all the liquid has evaporated.
Using a veggie peeler, remove one ribbon from the bottom of each zucchini half so they don’t fall over. Place a piece of Gruyère cheese in the bottom of each zucchini then fill with the meat filling. Top with some grated parmesan cheese and place on a hot grill. Cook covered for about 10 minutes. Serve immediately with a fresh salad.
NOTE: This recipe is a great way to use any fresh produce. We have enjoyed it with cauliflower, broccoli, spinach, and many other vegetables. Use your imagination.
