Smoked Pork Tenderloin with BlackBerry Bar-B-Que Sauce
The sauce on this smoked pork tenderloin is deliciously fruity, with a smoky hot finish. You will be amazed at the flavors in this sauce and it makes the pork is juicy and delicious. The recipe makes plenty so give it a try on chicken and ribs too.
Blackberry Bar-b-que Sauce
2 pints fresh blackberries, washed and sorted
1 T raw sugar
1 T crushed red pepper flakes
1/4 c smoky bar-b-que sauce
Puree the blackberries in a Vita-Mix or a food processor until very smooth. Add the sugar, red pepper flakes, and bar-b-que sauce. Mix well and place in a storage container in the fridge for a few hours for the flavors to meld.
NOTE: I smoked a pork tenderloin on the smoker for several hours, low and slow. Then brushed the blackberry sauce over the meat and let it continue smoking for about 30 more minutes. The result was delicious. I served the shredded meat on toasted ciabatta rolls with slaw and additional blackberry sauce on top. There were no complaints. In fact, there was no conversation at all. Everyone was too busy eating!
