White Chicken Chili
This is one of those recipes you pull out when you get home from work, sit down, start to relax then it hits you that you have to fix dinner!. Oh, the horror of it all!!. No worries, this recipe goes together fast and tastes like a chef visited your house while you were away.
White Chicken Chili
chicken meat, already cooked (leftovers are fine or used a roasted one from the store)
2 cans of cannellini beans
1 medium onion, finely chopped
3 cloves of garlic, finely minced
32 oz chicken stock
1 – 2 cans of diced green chili’s
1 can Rotel Tomatoes and Green Chili
1 t ground cumin
1 t thyme
In a large stock pot, heat some olive oil and sauté the onions. After the onions have sautéed, add the garlic and green chilies, allow to cook until the water from the chili’s has evaporated. Add the chicken stock, beans, cumin, and thyme. Heat to a rolling boil then turn down to simmer and add the chicken meat. Continue to cook for 10 minutes or until the chicken is hot. Serve with avocado, shredded cheese, crusty bread or hot tortillas.
