Delicious, Light Fruit Tarts that are SOOO Easy To Make

When you are looking for an easy light dessert that is also delicious, look at these fruit tarts.  You can make them in an individual size or in a family size.  I love to serve fruit tarts for Valentine’s Day, Mardi Gras, Easter, Mother’s Day. etc. They are the perfect dessert when you need something light.  Just use seasonal fruits and you are good to go.

Fruit Tarts

1 flakey pie crust recipe

seasonal fruit

1 pastry cream recipe

1/4 c apricot preserves

1/3 c white chocolate chips (approximate)

Alternate Cream Recipe

1  8 oz pack of cream cheese, room temp.

1/2 c powdered sugar

1/2 regular size carton of Cool White

Make your pie crust according to the instructions.  Place in either a full size tart pan or individual size tart pans.  Blind bake until golden brown.  Immediately place a few white chocolate chips in the bottom and allow to melt.  Spread around on the bottom of the tart shell and allow to harden.  This will help prevent your crust from turning soggy.

Make the pastry cream according to the instructions.  OR  If you are running short on time, make the Alternate Cream Recipe.  It is fast and easy as well as delicious.  Using a mixer, mix together the cream cheese and powdered sugar until well blended.  Add the Cool Whip and mix until combined.

After the white chocolate has solidified, add the pastry cream and smooth it over the bottom.  Place the fruit on top.

Melt the apricot preserves in a small pan and lightly brush it over the fruit.  This will make the fruit glisten and give it a slight sweet flavor without adding the flavor of the apricots.
