Roasted Chicken Breast with Blood Orange and Honey Sauce
Blood oranges are in season and they are so delicious. This is a simple dish that is sure to make your look like a culinary rock star! Just add a fresh salad for a complete, healthy meal.
Roasted Chicken with Blood Orange and Honey Sauce
Chicken breast for each person. I used skin on, bone in. This will give you the most flavorful chicken
Fresh thyme sprigs
2 cloves garlic, finely minced
juice from 5 blood oranges
1 T honey
1 t paprika
salt and pepper to taste
Place the chicken breasts in an oven proof baking dish. Lightly drizzle a little olive oil over the tops and season with salt and pepper. Sprinkle the paprika and minced garlic over the chicken and place a sprig of thyme on top of each breast. Put in the oven preheated to 425 degrees F. and roast for 45 minutes or until the internal temperature of the largest breast is 165 degrees F (I check at about 40 minutes because I don’t want the chicken to be dry). Remove from the oven and transfer the chicken to a platter – keep warm.
Transfer the drippings to a small sauce pan and add the blood orange juice and honey. Heat and reduce to get the sauce to thicken slightly. Spoon some over the chicken breast and serve the remainder on the side.
