Salmon with an Asian Reduction Sauce
This salmon recipe is delicious and easy to prepare in the oven or on the grill. Use a cedar plank for added flavor.
Salmon with an Asian Reduction Sauce
Asian Sauce:
1/3 c tamari or soy sauce, low sodium
2/3 c chicken stock
1/4 c brown sugar
4 cloves of garlic, minced
2 T fresh Thai basil, minced (used regular basil if fresh Thai isn’t available)
2 T lemon grass, minced
2 T fresh ginger, minced
Add all the ingredients to a sauce pan and bring almost to a boil. Reduce heat and simmer for 10 – 12 minutes or until sauce has thickened slightly. Divide the sauce into two bowls and set aside.
Salmon:
soak a cedar plank in water or white wine
2 t olive oil
salmon fillet
2 cloves garlic, minced
salt and pepper to taste
Coat the salmon fillet with olive oil. Place on a cedar plank and sprinkle salt, pepper and garlic on top. Bake at 425 degrees F for 25 – 30 minutes or until fish flakes easily and is done all the way through or grill until done. About 10 minutes before done, remove fish and brush with the Asian Sauce and return to the oven or grill to finish cooking.
When fish is done, remove from oven to a platter, sprinkle with some chopped green onion or Italian parsley if desired and serve with the remain sauce on the side.
This reduction sauce is also great with shrimp and chicken.
