Chili Shrimp for a Game Day Appetizer or Main Dish
This dish is great to serve as a Game Day Appetizer or as a Main Dish over pasta or fresh greens.
Chili Shrimp
2 lbs. shrimp, peeled, cleaned and pat dry with paper towels
1/2 c corn starch
salt and pepper to taste
Toss the shrimp in the seasoned cornstarch to lightly coat. Shake off the excess cornstarch and carefully place in hot oil to cook. Fry for 3 – 5 minutes (until golden brown on the outside) and remove to paper towels to drain.
CHILI SAUCE
1/4 c Thai chili paste
3 cloves of garlic, finely minced
juice of 1/2 lime
1 T soy sauce
3 green onions, minced
Combine all the above ingredients and whisk. Arrange the shrimp on a plate and spoon the chili sauce over. Top with more chopped green onion if desired.
