This recipe is low in fat and calories but very high in flavor. If you aren’t able to locate buffalo flank steak, you can substitute beef flank steak. I just like the buffalo because of the difference in calories per serving.

That’s a difference of 75 calories per serving!
Buffalo Flank Steak with Green Chili

3 cloves garlic, finely minced
1 medium onion, diced
8 roasted chili peppers, roughly chopped
10 oz jar of salsa
1/2 c red wine
1 T ground cumin
salt and pepper to taste
Heat 3 T olive oil in a medium-sized skillet. Place the flank steak in the hot skillet and brown on all sides.
Place the salsa, chili peppers, onion, garlic, and cumin in a slow cooker or an oven safe Dutch oven, place the browned flank steak on top of the above ingredients and season with salt and pepper.
Pour the red wine in the skillet that you browned the flank steak and allow is cook while you gently remove the browned bits from the bottom of the pan (this is deglazing the pan). Pour the wine on top of the flank steak. Set your slow cooker to 5 hours or place the dutch oven in a low heat oven (325 degrees F) for 5 hrs. The steak is done when if falls apart.
Place on a cutting board and shred. Serve with tortillas, salad, etc. We love it on top of salad with the green chili ladled over the top.
