Grilled Peaches with Strawberry Coulis and Ice Cream
These make a wonderful summertime treat. Great to serve as a light dessert when grilling because the peaches and strawberry’s go on the grill with the rest of the meal. Excellent way to sneak that fruit in when kids are just wanting sweets.
Grilled Peaches with Strawberry Coulis and Ice Cream
Peaches, cut in half and cored (Run a knife around the center of the peach from stem to bottom and back up, give it a quick twist and the peach is in half. Next, using a ring-type melon baller – I use the Pampered Chef version – core the peach and remove the pit.)
12 strawberry’s, washed and tops removed, on a bamboo skewer
Get your grill really hot, mine was at 550 degrees F. Place the peaches cut side down on the grill and place the skewer of strawberry’s on the grill. Grill about 7 minutes or until you have nice grill marks on the peaches. Remove.
Place the grilled strawberry’s in a blender with a little bit of fruit juice (not much, I used about 2 t passion fruit vinegar). Blend until you reach the desired consistency. As you can see in the photo, we like ours a bit chunky.
Place your peach, skin side down on a plate, add a small scoop of vanilla bean ice cream (I used the medium cookie dough scoop from Pampered Chef), drizzle with a bit of the strawberry coulis and enjoy.
Super easy to make and not heavy. Just fresh and light!
