Stuffed Chicken Breasts wrapped in Bacon
This is a follow-on to the Grilled Stuffed Shrimp wrapped in Bacon post from a few days ago. My family loved the shrimp so much that I decided to try the same filling in chicken. Let me just tell you that my son, who rarely eats anything other than pepperoni pizza, was looking for a second chicken breast. That is how great this was. My husband even said he would like to have this again soon. So off to the grocery store I go to buy more chicken breasts and shrimp.
Stuffed Chicken Breasts wrapped in Bacon
8 oz. cream cheese, softened
1 jalapeno, finely chopped
3 green onions, finely chopped
salt and pepper to taste
4 chicken breasts, skinless and boneless
4 slices of bacon
4 skewers
smoked paprika
In a medium bowl, mix together the cream cheese, jalapeno, and green onions. Refrigerate until ready to use.
Trim the chicken breasts of any extra fat. Place on a hard surface and pound out with a mallet or rolling-pin.
Place a few spoonful’s of the cheese mixture on the pounded out chicken breast and spread out. Roll up the chicken breast with the cheese on the inside. Wrap a full slice of bacon around the breast and secure both ends with a skewer. Repeat with all the breasts.
Sprinkle with smoked paprika and grill on a medium hot grill for 20 minutes or until done all the way through.
Remove skewers and serve immediately.
