Ice Cream Cake
My oldest baby just graduated from college and being a very proud parent, we decided to have a small celebration. When I asked what kind of cake he would like to serve, he stated ice cream cake. Next question, any idea’s on what you want. Answer: ice cream and not soggy cake. So my wheels started turning and here is what I came up with.
Made a bottom layer of frangipane and top with chocolate chips as soon as the frangipane comes out of the oven. As the chocolate chips melt, spread them thinly across the top of the frangipane and this will prevent the ice cream from melting into the cake and making it soggy.
Next, top with a delicious ice cream of your choice. We used crushed vanilla bean flavor so we could do more with the next step.
Next, set up a selection of candies so guests can make the “cake” they want. We took bowls and filled them with Reese’s Pieces, York Peppermint Patty bits, Butterfinger bits, M&M’s, Mini Reese’s peanut butter cups, and homemade caramel (super easy and in a post soon).
Our guests enjoyed and said they had never had such a fun dessert. They loved that they could add the candies they wanted so their dessert was just what they wanted, not what I wanted them to have.
