Easiest Dessert in the World
So you don’t like to be in the kitchen. You hate cooking. You never want to make anything to eat, ever! But you need a dessert to take to a function or for someone special and you want to show you care. What to do? Remember you hate being in the kitchen!
This was a predicament my daughter faced this past weekend. It was Mother’s Day and she saw that even though it was Mother’s Day weekend, I threw a college graduation barbeque for her brother, and I made a delicious (even if I do say so myself) Mother’s Day Brunch for my mother-in-law. My daughter saw that I worked hard for others and wanted to show me she appreciated this. So she took it upon herself to make a dessert for me.
Easiest Dessert in the World
1/2 c white chocolate chips
1 container of Cool Whip
1/2 c powdered sugar
1 – 8 oz. pack cream cheese
fresh fruit of your choice
1/2 c apricot preserves
Bake the pie crust in a tart pan with a removable bottom and as soon as the crust comes out of the oven, scatter the white chocolate chips over it. Allow to set for a bit until they are very soft. Spread in a thin layer over the bottom of the pie crust.
Whip the cream cheese and powdered sugar together then fold 1/2 of the container of Cool Whip into the mixture. Spread it over the white chocolate in the tart crust (after the crust is completely cool and the white chocolate was harden up again). Arrange fresh fruit over the top and brush with melted apricot preserves.
Proof that anyone can make an unbelievable delicious dessert if it is for the right reasons. Thank you to my beautiful daughter for helping to make Mother’s Day very special for me. You are my angel!
