Deliciously Healthy Fresh Salad full of Antioxidants
It seems I spend most of my life trying to get healthy foods into my family’s diet. One kid won’t eat it if it is green, the other won’t eat it if it isn’t fried, etc. When I do find something that fits the bill, I tend to serve it frequently until we hit burn-out status. Well, this salad seems to be fitting the required criteria. My oldest informed me he could eat this everyday. EUREKA!!! I may serve this all summer along. Oh, one final note: the salad holds up great in the frig. so no worries about making a huge bowl and having left-overs.
Kale-orado Salad
1 bunch fresh kale, washed, dried and roughly chopped
1 c carrots, julienned
1 c craisins
1 c edamame
2 c fresh blueberries
1/2 c sunflower seeds
1 c cashews
1/4 c Asian salad dressing (I use Drew’s Sesame Orange)
Mix everything except the salad dressing together in a large bowl.
Drizzle the dressing over and toss thoroughly to lightly coat everything. Refrigerate to allow flavors to meld. Enjoy!!
