Zucchini Fritters

Zucchini fritters are a great way to make a quick, nutritious meal containing three servings of vegetables per person.  This recipe is so tasty our son will even eat them – if you knew my family you would understand.  Sometimes it’s not even worth chewing off the restraints!

Zucchini Fritters – 1 serving

1 1/2 small zucchini – grated (should be about 1 1/2 c)

3 eggs

1/2 t garlic powder

1/2 t onion powder

dash of salt

1/4 t fresh cracked black pepper

dash of cayenne

3 T grated parmesan cheese

dash of hot sauce (optional)

shredded zuchinni

Mix the zucchini, eggs, salt, pepper, cayenne, garlic powder, and onion powder together in a bowl.  Heat a large non-stick skillet with 1 t olive oil.  When hot, spoon zucchini mixture into the pan.  Make the fritters about the size of a small pancake.

Cook until set then flip over and cook for a few more minutes until done.  Remove to a plate and sprinkle with parmesan cheese and hot sauce then serve hot.
