Asparagus and Tomato Salad
In my never-ending quest to improve my health, I am always on the look-out for any healthy recipes I can find and also taste good. You see, in my mind, healthy food equates yuck taste, no flavor! This salad is the exact opposite. It is full of flavor as well as being healthy. One thing I should tell you – don’t go for the pencil thin asparagus, it will be tough and fibrous. I read recently that all asparagus has the same amount of fiber so the thin ones are actually more tough because the fibers are packed into a small “package”. Find the large spears and you will be more happy with how tender they are. Since I have been following this rule, I have not had any tough asparagus. Also, this salad gives you three servings of vegetables.
Asparagus and Tomato Salad – serves 1 (multiply as needed for servings)
3/4 c blanch asparagus
3/4 c cherry tomatoes sliced in half
2 T salad dressing – I prefer Girard’s Lite Champagne dressing
Mix together and serve.
NOTE: To blanch asparagus – bring sauce pan of water to a boil and add salt. Add your chopped asparagus and boil for 5 minutes. Immediately remove from heat and drain then submerge in a bowl of ice water to shock the asparagus and stop the cooking process.
