Fried Okra
One of my favorite summertime foods when I was growing up from fried okra. I loved it when dad would bring it into the kitchen fresh from the garden; I knew mom would be fixing it for supper. I remember my brothers walking into the kitchen while mom was frying the okra and grabbing a handful. There never seemed to be enough! Fried okra is still one of my favorites and I’m happy to say I have passed my love of this pod on to my family with the same results of the kids walking into the kitchen while I’m cooking it and grabbing handfuls. My family likes to eat to like popcorn, just sitting around watching a movie or whatever. We even like it after it have cooled off. Again, never enough to go around.
Fried Okra
2 c AP flour
2 t salt
2 t garlic powder
2 t onion powder
1 t fresh ground black pepper
Fresh okra (washed and cut into rounds)
Heavy pan for frying with enough oil to cover the okra
Combine the flour, salt, pepper, garlic and onion powder in a bowl and mix well. Put the okra into the flour mixture and stir to coat. Shake off the excess and carefully put the okra into the hot oil. Fry until the okra changes from a bright green to a dull gray/green. Remove immediately and sprinkle with additional salt if needed. Serve hot.
