Parmesan Chicken

This recipe for Parmesan Chicken is quick and easy but full of delicious, juicy flavor.  It takes about 20 minutes of prep time (including trimming the chicken) and about 45 minutes to bake.  Fast enough for a weeknight meal.

4 skinless, boneless chicken breasts (you can use what ever cut of chicken your family prefers)

1/3 c flour

1 egg, beaten

1 1/2 c bread crumbs (I used the seasoned kind)

1/2 c finely grated parmesan cheese

2 t garlic powder

1/2 t freshly cracked pepper

Preheat oven to 375 degrees F.

Place the egg in a shallow bowl and beat.

Place the seasoned breadcrumbs, garlic powder, and cracked pepper in another bowl and mix well.

Dredge the chicken in the flour and shake off the excess.

Dip the chicken that has been dredged in flour in the egg and coat.  The seasoned breadcrumbs and place in an oven safe dish.  Lightly drizzle a small about of olive oil over the top of the chicken and place in the preheated oven to bake for approximately 45 minutes or until the juices run clear.  Enjoy with a fresh salad and crusty bread.
