This salmon recipe is delicious and easy to prepare in the oven or on the grill.  Use a cedar plank for added flavor. Salmon with an Asian Reduction Sauce Asian Sauce: 1/3 c tamari or soy sauce, low sodium 2/3 c chicken stock 1/4 c 

Tomato and Olive Appetizer

This combination of tomatoes and olives is a natural and so very easy to prepare.

Crostini

Tomato and Olive Crostini

1/2 c cherry tomatoes, halved

10 olives, your favorite variety, I like Castelvetrano

1/4 c grated parmesan cheese

3 basil leaves, chiffonade

1 – 2 t balsamic vinegar, I used fig balsamic

1 T olive oil

salt and pepper to taste

1 baguette of bread

Slice the bread into thin slices and drizzle with some olive oil.  Toast in the oven until golden brown around the edges.

In a small bowl, combine all the above ingredients.  Mix well and adjust the seasoning.  Spoon on top of the toasted bread and serve with a good wine and enjoy.

My husband and I will have this during the summer.  We love to sit out on the deck during the evening and enjoy the peace and quiet (when there is some) and this appetizer is wonderful for fresh delicious flavors.
