Healthy, Low Calorie, “Pasta” Sauce

This recipe is so fast and easy, you won’t believe it.  The flavors are amazing and it is healthy as well as low-calorie and filling!.  I added up all the calories and figure it is about 120 per serving (6 oz zucchini spirals is 60 calories, and 1 cup of sauce is 60 calories).  Not bad for dinner if your on a diet and unbelievably filling!

NOTE:  My meat eaters didn’t even miss the meat in this and the one in my family that hates anything green didn’t realize she was eating collard greens until I told her.

Veggie Pasta

Veggie Pasta and Sauce

enough spiral cut zucchini for everyone – this is your “pasta”

1 large  (28 oz) can diced fire roasted tomatoes

1 12 oz can tomato sauce

4 cloves garlic, finely minced

1 med. onion, medium dice

6 ribs celery, chopped

9 oz. cooked collard greens

1 t  basil

1 t thyme

1/4 t oregano

In a large pot (I used a dutch oven) combine everything except the zucchini and cook on low until hot all the way through.

In another large pot, bring 2 quarts water to boil.  Add salt (like you would for pasta) and add the zucchini.  Turn off the heat immediately.  You don’t want to cook the zucchini, just get it hot.  Strain.

Serve with the zucchini on the bottom and topped with the veggie sauce.
