Visit from an Elf

I guess this is what happens when you show your “very talented and creative” daughter a Christmas tree in a catalog you have just received and comment that you like it.  This happened to me recently.  I had just received a catalog full of Christmas

Glazed Pork Loin

The recipe for this Glazed Pork Loin took a bit in perfecting, but it was worth it.  The exact words from my son last night as we started to eat dinner:  “Ok, keep this recipe close by and make it often.  This is amazing!”  I

Marinated Chicken on the Grill

The recipe for Marinated Chicken is so easy.  Just a few ingredients, let the chicken marinate for a few hours or all day if you work, throw it on the grill or in the oven and it’s done!  The chicken has an amazing slightly spicy flavor and is really juicy (even on the grill).

Grilled Chicken Marinade

Marinated Chicken

4 skinless, boneless chicken breast or the cuts of chicken your family prefers

1/2 c Dijon mustard

2 T Heinz 57 sauce

1 c Ponzu sauce

1/2 c Mirin

5 cloves of garlic, finely minced

fresh cracked pepper to taste

Place all the ingredients in a large container for marinating.  Whisk together until smooth.  Add the chicken and coat all the pieces.  Cover and refrigerate.  When ready to cook, remove the chicken from the marinade.  Place on the grill or in an oven safe baking dish.  Spoon a bit of the marinade over the chicken then cook.  Discard the remaining marinade – DO NOT USE IT on the COOKED chicken!.

Serve with a fresh salad and crusty bread.
