Delicious Roast Chicken Soup – Great For Battling a Cold or The Flu

I serve this soup to my family anytime one of us comes down with a cold or the flu.  It is full of veggies, chicken and homemade noodles.

4 chicken breasts, skinless and boneless, roasted then chopped

3 qts. homemade chicken stock

4-5 carrots, chopped

4-5 ribs of celery, chopped

1 medium onion, chopped

5-6 cloves of garlic, minced

1 t thyme

1/4 t oregano

3 bay leaves

1 can tomatoes with green chilis

1/4 c. Italian parsley, minced

1 large bunch of Kale, ribs removed and chopped

1/2 – 1 recipe of homemade pasta (don’t roll as thin as the pasta and they make great noodles!)

In a large stock pot, add a little olive oil.  Caramelize the carrots, celery, onions, and garlic.  Be careful not to burn the garlic.  When you have a nice  caramelized color on the veggies, add all the other ingredients except the noodles.  Simmer for 30 minutes.  Add the noodles and allow to boil for 3-5 minutes.  Serve with crusty bread and grated parmesan cheese.
