My family loved the spinach stuffing for the mushroom caps so much, I decided to try it in a grilled chicken breast.  Even a bigger hit!!

Spinach Stuffing recipe

Using a piece of plastic wrap, carefully pound out the chicken breast to about 3/8 of an inch thick.

Season with salt and pepper.

Spread a few tablespoons of the spinach stuffing onto the chicken breast and roll it up.  Secure with a skewer.  Place on a hot grill and cook until done (depending on how hot your grill is, about 7 – 10 minutes).

Enjoy with a fresh herb salad and a glass of white wine.
