Where Did the Summer Go?

Grilled Stuffed Zucchini

I love summer, all the fresh veggies that are filling up the farmers markets and our fridges.  I am always looking for ways to utilize the fresh produce and this has become a family favorite.  Even the kids love it! Grilled Stuffed Zucchini 1 lb. 

Grilled Champagne Chicken

For this recipe, purchase an inexpensive bottle of champagne.  The champagne will serve as the acid for the recipe so don’t worry about the drinkability of it.

Champagne Chicken

Grilled Champagne Chicken

1/4 c champagne

1 c olive oil

1 clove garlic, finely minced

fresh cracked black pepper, to taste

salt, to taste

chicken breasts

1/3 c finely shredded parmesan cheese

Whisk together the champagne and olive oil until completely incorporated.  It will thicken and this is an indication that you are getting the champagne incorporated into the olive.

Add the garlic, salt and pepper.

Place the chicken breasts in the champagne and olive oil and coat well.

Allow to marinate for 30 minutes to 1 hour.

Place the chicken on a very hot grill and cook until done (about 5 minutes per side).  Just before you are ready to remove the chicken from the grill, sprinkle it with the parmesan cheese.  Serve with a fresh salad, fresh mozzarella cheese, and a crusty bread.
