What’s For Easter Dinner?

Have you been hearing that question a lot lately?  I sure have.  We had a struggle this year coming up with the menu for Easter Dinner.  One wants ham (I’m kinda tired of ham!), one wants turkey, (that’s for Thanksgiving!), I finally settled everyone on a roast chicken.  I’m going to roast it with rosemary and lemon.  Yes, the recipe will be available next week – sorry, it will be after Easter.  (This job thing is killing me for posting timely recipes, but now I understand why so many of my friends who work outside the home are always tired.)  And since I am trying for “healthy” foods this year, there won’t be the traditional cheesy hash brown casserole (I love that stuff but way too many calories). So, instead of the potatoes, I will be serving broccoli salad, roasted asparagus wrapped in prosciutto, frog eye salad, deviled eggs, and for dessert – lemon tartlets and strawberry shortcake.

I will try to post some of the recipes ahead of time.  Ones that are already on the site are the roasted asparagus wrapped in prosciutto, lemon tartlets, and broccoli salad.

So celebrate Easter!  Have a wonderful and safe holiday with your family and friends.  Be thankful for what you have because there are many in this world doing without.
