Delicious, Fresh Asparagus

My favorite spring-time treat has arrived in the grocery stores.  Asparagus!  I love it when the stalks are fresh and tender.  Just make sure to choose stalks that are thick at the base.  One would think that the thin stalks would be more tender but that isn’t the case with asparagus.  There are the same number of fibers in the thin ones as the thick but because they are packed into a smaller area, they are tough and chewy.

Roasted Asparagus with Thyme and Lemon

1 lb of fresh asparagus, cleaned and trimmed

3 sprigs of fresh thyme or 1 t dried thyme

1 half lemon

Place the asparagus on a baking sheet and lightly drizzle with olive oil.  Season with salt and pepper then give it a toss to coat well.  Place the sprigs or thyme on top or add the dried thyme with the salt and pepper.  Roast at 350 degrees F for 20 minutes.  Remove from the oven and transfer to a serving dish.  Drizzle with the juice of 1/2 lemon and serve.
