Maple Roast Chicken Has the Perfect Combination of Sweet and Hot

The search continues for an outstanding chicken dish.  Something tasty and satisfying.  I opened my pantry today looking for inspiration and the only thing I saw was maple syrup.  Not wanting pancakes for dinner, I decided to baste chicken breasts with it and see what happened.  My son commented immediately “You can make this again!”  Always a good thing to hear from a picky eater!

Maple Roasted Chicken

Maple Roast Chicken with Brown Sugar Bacon

4 chicken breasts

salt, pepper, and cayenne pepper

Place the chicken breasts in an oven safe baking dish and season with salt, pepper, and cayenne.  If you are not using skin-on chicken breast, add a little olive oil to the dish to prevent sticking.

Roast at 350 degrees F for 1 hour.

4 pieces of bacon

1/4 c brown sugar

Press the brown sugar into both side of the bacon and set aside.

1/4 c pure maple syrup (do not use with an artificial flavored syrup)

After the chicken has roasted for 1 hour, brush the maple syrup over the breasts.  Lay the brown sugared bacon on top and add a dash of cayenne again (optional).  Return to the oven to continue roasting until the bacon is cooked through (about 30 minutes).  Remove and serve.
