Better Planning Needed for Cook at Home Meals

I recently started working outside the home for the first time in several years.  I have always done some sort of work; volunteering at the kid’s school, making quilts, etc., but this is the first time I have had an actual paying job in quite a while.  One thing became painfully obvious yesterday.  I have to plan better for meals since I am now working.  Case in point:  last night I got off work at 7 pm and came home.  Now, others in the household were already home and had been for about an hour.  When I arrived, the first thing I heard was “what’s for dinner?”  Really?  I just got home!  Well, I knew it was only a matter of time before I would have to deal with this so I shouldn’t have been surprised.  Since I am trying hard to eliminate fast food meals from our diet, I looked in the fridge to find – you got it, nothing!  So I called an audible – it’s a fend night!  Now most nights I am off work at 5:30 but that is still too late to come home and thaw something out.  I used to get up in the morning and pull something out of the freezer, set it on the kitchen counter and let it thaw all day.  Can’t do that now because I don’t have the luxury of being able to check it and move it to the fridge when it is thawed.  So, I’m going to have to plan meals two days in advance now.  Also planning on lots of soups made on weekends then freezing them as well as lasagna, spaghetti sauce, slow cooker, etc.   Working outside the home certainly adds a new complication to life!  Oh, it you have any great recipes that will work for my new lifestyle, please forward them to me at:  Marcia@pepperedhearth.com  Who knows, they may end up on here – you’ll get the credit too, of course.
