Luscious Lemon Tarts are Easy to Make

This lemon tart recipe goes together so fast and tastes fresh and delicious.  Perfect for a Springtime luncheon.

Lemon Tart

1 recipe of pie crust

1 box of lemon pudding

1 8 oz. box of cream cheese

1 regular size carton of cool whip

1/2 c powdered sugar

Make the pie crust and blind bake until golden brown (I used tart pans but you can use a regular pie plate).

Mix together the cream cheese, powdered sugar, and 1/2 the carton of cool whip using a mixer.  Mix until smooth with no lumps of cream cheese remaining.  Spread a layer into the cooled pie shell.

Make the lemon pudding according to the instructions on the box.  Cool.  Spread a layer on top of the cream cheese mixture.

Refrigerate until ready to serve.

Serve with additional cool whip or lightly dust with powdered sugar.
