Yummy, Crispy Peppered Shrimp

Sometimes you need a dinner that comes together quick but tastes like you spent hours slaving over a hot stove to create your masterpiece.  Peppered Shrimp gives you the gourmet treat that only takes 20 minutes start to finish.

Peppered Shrimp

Peppered Shrimp

1 lb deveined and shelled shrimp

3 T cornstarch

1 t garlic powder

1 1/2 t onion powder

dash of cayenne

salt and pepper to taste

three bell peppers, sliced (one of each color)

onion, thinly sliced

2 cloves garlic, finely minced

jalapeno, thinly sliced

fennel bulb, thinly sliced (optional)

Place the cornstarch, garlic powder, onion powder, and a dash of cayenne in a medium bowl.  Add the shrimp to the bowl and toss to coat.  Place the coated shrimp in a pan of hot oil and fry for about 3 minutes per side or until golden brown.  Remove to a paper towel to drain.  Carefully place the sliced jalapeno into the hot oil and allow to “fry” for about 30 seconds.  Remove to the paper towel.

Heat 2 T olive oil in a medium skillet.  Add the veggies and sauté on high heat for 4 minutes.  Place on a platter and top with the shrimp.  Serve with a fresh salad for a complete meal.
