My poor grey girl had surgery on her tummy.  She started having trouble going potty on Saturday so we took her to the vet and they determined she had over 50 bladder stones.  Those had to come out! Here she is when I picked her 

Fresh Tomato Salad

The tomato vines are producing like crazy and you are wondering what you are going to do with all those wonderful, fresh little orbs of ripe, juicy goodness.  How about a fresh tomato salad full of flavor?

Tomato Salad

Fresh Tomato Salad (each ingredient is per serving)

fresh tomatoes, chopped or sliced in half if small (about 1 1/2 cup per serving)

3 leaves fresh basil (per serving), Chiffonade

2 T crumbled feta cheese

1 T shallot, finely minced

1 T salad dressing (I prefer a champagne vinaigrette)

Mix everything together in a bowl and let sit for 30 minutes so the flavors can meld.
Enjoy with a slice of crusty bread.

NOTE:  I love to use Heirloom varieties of tomatoes.  They have so much more flavor and are very interesting to look at.  In fact, I only grow Heirloom varieties in my garden.
