Tonight’s recipe didn’t turn out completely perfect so I’m only posting what did turn out good.  This salsa has  fresh, fruit flavors, slight tang of lime, and perfect heat of jalapenos.  Reminds me so much of summer.  I will be making sure there is a 

Grilled Chicken so easy you don’t even have to be able to cook

Here is proof that you don’t have to be able to cook in order to make something really awesome!  My daughter hates to cook; she hates the kitchen and will do anything to avoid getting even close to a cooktop.  Last night she told me she was going to cook dinner tonight so I decided to let her.  If I can get a night off of chef duty, you bet I’m going to take advantage of that!.  Her is what she came up with.

Mango Sauce

Grilled Chicken Skewers with Mango Sauce

1 1/2 c mango nectar

1/3 c brown sugar

1 T garlic, finely minced

1 t chili powder (she used Ancho)

1 T soy sauce

a dash of cayenne pepper

4 skinless boneless chicken breasts, cut into strips

8 long bamboo skewers

In a medium sauce pan, combine the mango nectar and the brown sugar.  Bring to a rapid boil then reduce the heat to medium.  Add the soy sauce, chili powder, garlic, and cayenne pepper.  Continue to cook until reduced by about half.  Remove from heat and pour about half into a separate bowl.  Set aside.

Thread the chicken strips on the bamboo skewers.  Place on a hot grill, brush with the mango sauce.  After about 5 minutes, turn the chicken over and brush with mango sauce again and cook until the chicken is done all the way through.  Serve hot with the reserved mango sauce on the side.

Mango Sauce  This sauce would also be great with shrimp.  I’m going to try it with calamari steaks this weekend – I’ll let you know how it is.
