Mango or Pineapple Salsa is delicious on Seafood

Tonight’s recipe didn’t turn out completely perfect so I’m only posting what did turn out good.  This salsa has  fresh, fruit flavors, slight tang of lime, and perfect heat of jalapenos.  Reminds me so much of summer.  I will be making sure there is a bowl of this in the frig all summer long.

Mango Salsa with Calamari  Here the Mango Salsa is shown with grilled calamari steaks and mango sauce.  Still working on this recipe but I do have high hopes for it.  My husband loved it, me not so much – and I’m the one who loves calamari, go figure!!

Mango or Pineapple Salsa

3 c. fresh mango or pineapple, chopped (I know it says “fresh” but if you are in a pinch, frozen will work also.  I used frozen mango, pineapple, peach mix)

1 jalapeno, finely minced (I used the seeds and veins and thought the heat level was perfect)

1 red bell pepper, medium chop

3 green onions, finely chopped

1 T fresh lime juice

Combine all the ingredients in a bowl, mix well and refrigerate to allow the flavors to meld.

Mango Salsa

If using with hot food, warm slightly in the microwave (just enough to take the chill off) or it will make your food cold.
