Barbacoa Spice Rub

I love barbacoa rubbed meats.  I love to put a pork butt in the crock pot that has been rubbed with this barbacoa spice rub, let cook real slow for 5 hours then take it out, throw it on a hot grill for a few minutes 

Italian Chicken O’Brien – like Carrabba’s

This is another option if you are trying to eat more chicken and fish instead of beef.  This recipe is very similar to Carrabba’s  Chicken O’Brien.  Very easy and can be grilled or baked/roasted.  The flavors are fresh and creamy.  Serve it with the Kale-orado

As you probably know by now if you have read many of my wine posts, I prefer red wines to whites.  No particular reason other than I think the reds have more complex flavors that I prefer.  But this white from La Crema speaks to me.  It has a beautiful pale golden color and great legs.  The aromas are ripe with pear and stone fruits like peach and apricot.  The flavor follows the aromas with pronounced pear, peach and apricot flavors followed by apple and a light oak finish.  This wine goes fantastic with the Chicken O’Brien.  I think it complements the goat cheese wonderfully by adding to the creaminess.  While I probably wouldn’t purchase an entire case of this wine, I would definitely purchase 6-8 bottles.  La Crema Sonoma Chardonnay would also go great with fish, seafood, salads (paired very well with the Kale-orado salad on this website), and cheese platters.  Give it a try, this one will surprise you!.
